The Bikini Cocktail
Makes enough for 10 guests
Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
Making the Syrup: Put all the ingredients inside a pot, bring to a gentle boil, agitating until the sugar dissolves. Next, turn off the burner and leave to cool down entirely. Transfer into a clean bottle, seal and refrigerate it in the refrigerator, where it will keep for up to a month.
Preparing the Batch Mix: Pour every spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then strain best through muslin, so it's perfectly clear.
For serving: Add 85ml of the cocktail base to a cocktail shaker packed with ice, gently stirring lightly for about 60 seconds to cool it down. Pour to a chilled martini glass or similar, top with the cranberries adding the final touch using a brief mist of the essential oil over the drink.
